Fishbone 2024 Blue Label Sauvignon Blanc Semillon
A classic white blend of Sauvignon Blanc grown in the sandy Hithergreen plains and Semillon grown in the loamy Ferguson Valley slopes, harvested after a dry summer and culminating in a very aromatic wine rich in white fruit flavours.
TASTING NOTES
Pale straw in colour with a faint lime green rim, this wine exudes a complex, spicy perfume with aromas of fragrant white fruits and cut straw. On the palate, it is dry with soft acidity and fine tannins, offering flavours of poached pear and a subtle hint of cinnamon spice. The wine finishes with impressive length, leaving a lingering complexity.

WINEMAKING
Machine harvested after a dry summer and culminating in a very aromatic wine rich in white fruit flavours. Quickly pressed, the juice was fermented with X5 yeast to accentuate the natural fruit flavours; post ferment blended with Ferguson Valley Semillon and left on gross lees for 3 months, minimal handling and finings before bottling.
